Viña William Fèvre Chile May Harvest – Sauvignon Blanc

Our Sauvignon Blanc vines were imported from France and planted in our vineyards in Pirque (Maipo Alto), at 700 meters of altitude, where they enjoy the cool influence of the Andes.
These grapes are harvested in the middle of May, the middle of the autumn, reaching a high concentration of fruit and sweetness.

Winemaking process

The bunches are selected and pressed without destemming. After a gentle pressing operation, half of the juice is fermented in steel tanks and the other half in French oak barrels, for some 35 days. The malolactic fermentation is avoided.
The wine is aged for 6 months on its fine lees, with weekly riddling to extract all the body, unctuousness and aromas.

Tasting Notes

This wine has a bright yellow color.
It shows intense floral and honeyed notes, and fruits like dried apricot, peach and melon. It has a very good freshness that balances very well the sweetness.

This wine is best served at 8°C, as an aperitif or with foie gras, blue cheese, or a fine dark chocolate.
